Matcha Soft Serve (No Machine)

Make creamy matcha soft serve at home without an ice cream machine using a simple freeze-and-whip method.

Direct answer: whisk matcha into a smooth paste first, fold into sweetened cream base, then freeze in short intervals and whip between freezes for a soft-serve texture.

Ingredients

  • 2 tsp culinary matcha, sifted
  • 2 tbsp warm water
  • 300 ml double cream
  • 200 ml sweetened condensed milk
  • 1 tsp vanilla extract

Method

  1. Whisk matcha with warm water until lump-free.
  2. Whip cream to soft peaks.
  3. Fold in condensed milk, vanilla, and matcha paste.
  4. Freeze 60 minutes, whisk vigorously, then repeat 2-3 times.
  5. Serve immediately for soft-serve texture.
