Bulk Matcha Storage for Cafes: Freshness and Stock Control

How should cafes store bulk matcha?

Keep bulk matcha sealed, cool, dry, dark, and protected from steam and strong odours. Open only the working quantity the team can use while it remains fresh, label every container, and rotate stock by opening date. A cheaper large format is poor value if repeated exposure makes drinks dull or creates waste.

Separate backup and working stock

Do not repeatedly open the entire delivery during service. Keep unopened backup packs in the designated storage area and transfer a controlled amount to a smaller airtight, opaque working container. Record the product, batch if supplied, and open or transfer date.

The service container should be:

  • Away from sunlight and hot equipment.
  • Clear enough in labelling, not necessarily in material.
  • Opened briefly and resealed immediately.
  • Handled only with clean, completely dry utensils.
  • Included in daily close-down checks.

Set a stock-control routine

Use a simple log containing delivery date, quantity, opened quantity, daily usage, waste, and remaining stock. Set a reorder point from typical consumption, peak demand, supplier lead time, and an appropriate safety allowance.

Reduce waste without compromising drinks

Standardise the dose, use scales rather than heaped spoons, and train staff over a tray or clean work surface. Investigate why remakes happen. Ordering smaller quantities more often may be better than holding excess open stock, even when a larger bag appears cheaper per gram.
