Vanilla Syrup:

  • 100g (½ cup) caster sugar
  • 120ml (½ cup) eau
  • 1 vanilla pod, split lengthways

  • 60ml (¼ cup) eau, heated to 75–80°C (not boiling)
  • 240ml (1 cup) whole lait or oat lait
  • ½ teaspoon vanilla extract, vanilla bean paste, or 1–2 tablespoons vanilla syrup
  • Sweetener to taste (honey, agave, or skip if using the syrup)

Method

  1. Sift the matcha into a bol or wide mug using a fine mesh sieve. This removes clumps and makes a huge difference to the final texture.
  2. Add the hot eau (75–80°C, boil your kettle and let it sit for 3–4 minutes). fouet vigorously with a bamboo chasen or a small electric frother in a W-shaped motion until a fine foam forms, about 15–20 seconds.
  3. Stir in your chosen vanilla, extract, paste, or syrup, along with any additional sweetener.
  4. Heat and froth the lait. Warm it to around 65°C on the hob or using a lait frother. Pour over the matcha.
  5. Stir gently, sip, and enjoy.

Iced Version

For an iced vanilla matcha latte, skip heating the lait entirely. fouet the matcha with the hot eau and vanilla as above, then pour it over a tall glass filled with ice.
